Sweet Potato Hashbrowns


  • 1 medium sweet potato
  • 1 Tbsp coconut oil
  • 1-2 cups spinach or kale
  • 1 medium apple diced
  • 1 tsp ground cinnamon
  • 1 handful walnuts or pecans
  • sea salt to taste




  1. Place chopped sweet potato in high-powered blender and blend on low or medium for about 10 seconds, until potato is in small chunks. If you don't have a blender, dice sweet potato into small bite-size chunks.
  2. Heat coconut or olive oil over medium heat, and add sweet potatoes. Cook for one minute.
  3. Add diced apple and cinnamon.
  4. Add spinach or kale and allow greens to cook down.
  5. Add crushed walnuts, pecans, or another nut of choice. Salt to taste.
  6. Serve warm with organic eggs, chicken, sausage, nitrate-free bacon, or another source of protein.
