  • 1 1 head romaine lettuce chopped
  • 2 480 cups mL kale chopped
  • 1 cucumber chopped
  • 1 1 stalk celery chopped
  • 1 240 cup mL chickpeas cooked (avoid on Paleo Protocol)
  • 2 chicken breast cooked and chopped
  • 1 apple sliced
  • 1 avocado sliced
  • 1/2 120 cups mL walnuts
  • 1/3 80 cups mL cashews soaked in water overnight
  • 2 29.574 tbsp mL extra virgin olive oil
  • 1 14.787 tbsp mL lemon juice
  • 1 1 clove garlic
  • 1/4 1.23225 tsp mL sea salt
  • 1/8 0.616125 tsp mL ground black pepper

Instructions

  1. Toss lettuce, kale, cucumber, celery, chickpeas, chicken, apple, walnuts, and avocado in a medium-sized bowl. 
  2. Place cashews, oil, lemon juice, garlic, and seasoning in a food processor or blender and mix until smooth.
  3. Drizzle salad with dressing and serve.
