Vanilla Berry Chia Pudding




  • 1/4 cup chia seeds
  • 1 1/2 cup unsweetened milk substitute
  • 1/4 tsp vanilla extract
  • 1/4 tsp almond extract
  • fresh berries of your choice
  • 1/2 Tbsp unsweetened coconut flakes
  • 1/2 Tbsp almond slices


  1. Put chia seeds, milk substitute, vanilla, and almond extract in a glass jar and tighten the lid.
  2. Shake vigorously to combine ingredients well.
  3. Refrigerate for at least 3 hours or overnight, until the mixture becomes thick and pudding-like.
  4. Remove from refrigerator and stir once more when ready to serve.
  5. Spoon into bowls and top with fresh fruit, coconut flakes, and almonds.
