Zucchini Noodle Salad
  • 2 zucchini
  • 2 carrot grated into about 1/2 cup
  • 2 29.574 tbsp ml green onions sliced thinly
  • 2 29.574 tbsp ml cilantro chopped
  • 3/4 180 cups ml pineapple cubed
  • 1/4 60 cups ml cashews
  • 1 chicken breast cooked and cubed
Dressing
  • 1/2 120 cups ml cashews
  • 2 29.574 tbsp ml coconut milk
  • 1 4.929 tsp ml ginger
  • 1 14.787 tbsp ml lemon juice
  • 1 4.929 tsp ml apple cider vinegar
  • 1/2 2.4645 tsp ml sea salt to taste

Instructions

  1. Using a spiral slicer, slice zucchini into thin noodles. On a cutting board cut noodles to desired length.
  2. Toss all salad ingredients in salad bowl. 
  3. Blend dressing ingredients together in blender and drizzle desired amount over salad.
