We’ve been lucky to have a cooler summer in Austin this year, but this past weekend definitely brought the familiar heat. This Cucumber Melon Slushie is a wonderful cool treat on any hot summer day.
Cucumber Melon Slushie with Mint

Ingredients
- 1 melon (cantaloupe, honeydew, ambrosia melon, etc.), sliced and peels discarded
- 1 cucumber sliced lengthwise and ends discarded
- 3 cups 720.00 ml ice
- mint leaves for garnish
Instructions
- Juice the melon and cucumber in a juicer then add to blender with 3 cups of ice.
- If you do not have a juicer, use your blender to process the melon and cucumber with the option to strain away the pulp with a cheesecloth before blending with ice.
