This Brussels Sprouts Salad is crunchy and sweet! It takes minutes to prepare and can be enjoyed right away, or you can make a big batch and use it as leftovers throughout the week.
Ingredients
Salad
- 1 lb 454.00 g brussels sprouts leaves separated
- 1 carrot julienned
- pomegranate seeds from one pomegranate
- 2 blood oranges peeled and sliced
- 1 oz 29.57 ml pecans chopped (optional, avoid on the Autoimmune Protocol)
Dressing
- 2 Tbsp 29.57 ml mustard made with apple cider vinegar
- 3 Tbsp 44.36 ml extra virgin olive oil
- 1 1/2 tsp 7.39 ml apple cider vinegar
- 2 Tbsp 29.57 ml agave nectar
- sea salt to taste
- ground black pepper to taste
