Perfect summertime salad!  I thought I would try cherries instead of grapes for this Cherry Chicken Salad and it turned out great.

Cherry Chicken Salad

Ingredients

  • 1 chicken breast
  • 1 Tbsp extra virgin olive oil
  • 1 clove garlic minced
  • 2 cups kale sliced
  • 2 stalks celery sliced
  • 1 cup fresh cherries pitted and sliced
  • 1/2 cup walnuts chopped
  • 1/2 cup coconut milk yogurt unsweetened

Instructions

  1. Heat a pan with olive oil over medium heat. Add garlic.
  2. When garlic is slightly brown add chicken. Cook for about 5 minutes, then flip and cook fully through.
  3. Slice chicken and toss with kale, celery, cherries, and walnuts. 
  4. Add coconut milk yogurt and mix until all ingredients are coated.
