Strawberry Banana Panna Cotta

Strawberry Banana Panna Cotta

Ingredients

  • 2 banana
  • 10 strawberries
  • 13.5 oz full fat coconut milk
  • 2 scoops Spectrum 5 Collagen™
  • 1/2 cup water
  • 1 tsp vanilla extract or 1 two-inch piece of vanilla bean

Instructions

  1. Pour ½ cup filtered water into dish with Spectrum 5 Collagen™ until it is spongy, approximately 5-10 minutes.
  2. In a high-speed blender, blend coconut milk, bananas, strawberries and vanilla until thoroughly combined.
  3. Warm Spectrum 5 Collagen™ on the stovetop or in the microwave for about 30 seconds, not allowing it to boil!
  4. Remove from heat and mix in banana, strawberry, and coconut mixture.
  5. Place in individual ramekins and chill in refrigerator, until set (at least 4 hours, or overnight).
  6. Top with sliced strawberry, and serve chilled.
