I made this salad over the weekend for a friend’s going away party. It was totally delicious and paired so well with organic, pasture-raised, grilled chicken from Costco! In addition to an amazing salad base, you can choose any tasty vinaigrette to drizzle over the top. I’m definitely a fan of mixing it with a pomegranate vinaigrette dressing and some fresh veggies!

Ingredients

  • 3 cups spring greens
  • 1/2 head green cabbage thinly sliced
  • 2 stalks celery thinly sliced
  • 1/2 green apple thinly sliced
  • pomegranate vinaigrette to taste
  • 4 basil leaves

Instructions

  1. Toss organic spring greens, cabbage, celery, and apple in pomegranate vinaigrette as desired.
  2. Garnish with basil leaves.
