Making these blueberry bites couldn’t be simpler. Start by gathering your ingredients: tigernut flour, Leaky Gut Revive®, organic dried apricots, dried blueberries, blueberry powder, vanilla extract, and fresh lemon zest.

In your food processor, combine the tigernut flour, dried apricots, blueberry powder, vanilla extract, Leaky Gut Revive®, and lemon zest. Blend the mixture until it begins to clump together. You may need to stop and scrape down the sides of your food processor to ensure everything is evenly combined. Once the base mixture is smooth and sticky, add in the dried blueberries. Pulse just a few times to incorporate them without breaking them down completely. The chewy pieces of blueberry create little pockets of sweetness in each bite.

Using a tablespoon measure, scoop out the mixture and roll it between your palms to form small, compact balls. Place each ball onto a plate or baking sheet lined with parchment paper to prevent sticking. For the best texture, refrigerate the bites for at least 20 minutes to firm them up before enjoying.

Ingredients

  • 1 cup tigernut flour
  • 1 scoop Leaky Gut Revive®
  • 12 organic dried apricots 
  • ½ cup dried blueberries 
  • 1 tsp blueberry powder
  • 1 tsp vanilla extract 
  • 1 tbsp lemon zest

Directions

  1. Add the tigernuts, dried apricots, blueberry powder, vanilla extract, leaky gut powder, and lemon zest into the food processor. Blend until the mixture begins to clump together. If needed, scrape down the sides of the bowl to make sure everything processes evenly.
  2. Add the dried blueberries at the end and pulse just to combine.
  3. Scoop out about 1 tablespoon of the mixture at a time and roll it into a ball using the palms of your hands. Place each ball on a plate or baking sheet lined with parchment paper. 
  4. For the best texture, refrigerate the energy bites for at least 20 minutes to firm up. Once they’ve set, transfer them to an airtight container and enjoy!
