Cauliflower is a staple for most of us on the Autoimmune Protocol. It was time for some variety in my cauliflower recipes! This basic soup is simple, but delicious.
Cardamom Spiced Cauliflower Soup

Ingredients
- 1 Tbsp 14.79 ml coconut oil
- 1 1/2 sweet onion roughly choppped
- 1 Tbsp 14.79 ml ginger approximately 1 inch, peeled and minced
- 3 cloves garlic peeled and minced
- 15 cups 3600.00 ml cauliflower about 3 heads, washed and broken into florets
- 1/2 tsp 2.46 ml cardamom
- 1 tsp 4.93 ml ground ginger
- 1 tsp 4.93 ml thyme
- 1 tsp 4.93 ml sea salt
- 1/2 Tbsp 7.39 ml ground black pepper
- 4 cups 960.00 ml bone broth
Instructions
- Heat coconut oil in large soup pot over medium heat. Add sweet onion and let cook for 2-3 minutes.
- Add ginger and garlic and let cook for 1-2 minutes.
- Add cauliflower florets, cardamom, ground ginger, thyme, salt and ground black pepper. Cook for about 10 minutes, stirring often.
- Add bone broth. Bring to a boil then simmer covered for about 35 minutes.
- Remove from heat and carefully blend with an immersion blender or in batches in a standing blender.
