Protein-Packed, Paleo Pumpkin Mugcake
Ingredients
- 1 tbsp unsweetened almond milk or coconut milk
- 1 scoop The Myers Way® Vanilla Bean Paleo Protein
- 1 tbsp coconut flour
- 1 tbsp honey
- 1/4 cup pumpkin puree
- 1 large egg
- 1/8 tsp pumpkin pie spice
- pinch cinnamon
- dairy-free, dark chocolate chips optional
Instructions
- Grease small deep mug and set aside.
- In mixing bowl, combine protein powder, coconut flour, and pumpkin pie spice and mix well.
- In a separate bowl, whisk the egg, milk, and honey. Pour into dry mix until blended. Mix in chocolate chips if desired.
- Pour mixture into greased mug. Microwave for 90 seconds and remove. Top with cinnamon and enjoy!
