I had a lot of cucumbers in my fridge which inspired this Quick & Crunchy Cucumber Salad. It takes less than 5 minutes and is great for lunch or a side salad.
Quick & Crunchy Cucumber Salad

Ingredients
- 1/2 cucumber peeled and cubed
- 1/2 avocado cubed
- 3/4 cup 180.00 ml chicken cooked, cubed or shredded
- 1/4 mango cubed
- 1/4 cup 60.00 ml walnuts
- 1 tsp 4.93 ml lemon juice
- 1/2 tsp 2.46 ml sea salt to taste
Instructions
- Mix all ingredients together in a serving bowl.
- If making ahead of time, wait to add avocado for freshness.
