Salted Caramel Blondies

Ingredients

Salted Caramel Blondies
  • 3/4 cup coconut flour
  • 1/2 cup Cassava flour
  • 2 scoops The Myers Way® Salted Caramel Paleo Protein
  • 1/4 cup coconut sugar
  • 1 1/2 cup cup unsweetened organic apple sauce
  • 1 tsp baking soda
  • 1/2 cup coconut oil melted
  • 1 tsp alcohol-free vanilla extract
Salted Caramel Sauce
  • 1 can unsweetened coconut cream
  • 1/4 cup coconut sugar
  • 1/4 tsp sea salt
  • flaked sea salt topping

Instructions

  1. Preheat oven to 350F and line a 8x8 baking pan with parchment paper.
  2. In a large bowl combine coconut flour, cassava flour, Salted Caramel Protein Powder, coconut sugar, , baking soda, and sea salt.
  3. In a small bowl mix together applesauce, melted coconut oil and vanilla.
  4. Add the wet ingredients to the dry and stir to combine.
  5. Pour the batter into the lined baking dish and press down to fill the pan.
  6. Use a spatula to flatten the batter to ensure it is smoothe before baking.
  7. Bake for 20-22 minutes or until the edges start to slightly brown.
  8. Remove from heat and allow to cool to room temperature before pouring the caramel overtop.
  1. In a small saucepan over medium heat add coconut cream, coconut sugar and salt and stir until combined.
  2. Bring to a boil then reduce heat to medium low and allow to simmer 30-35 minutes.
  3. Stir often.
  4. The caramel is ready once it has reached a dark amber color and is thick enough to coat the back of the spoon.
