Glass jar filled with Blackberry Pie Parfait - AMMD™

Whether you serve it for a weekend brunch, an afternoon pick-me-up, or a light dessert, this recipe will quickly become a summer favorite. Savor the taste of blackberry pie without the gluten, dairy, or refined sugar in this AIP friendly parfait.

Summer is the perfect time to enjoy fresh, vibrant berries. Blackberries reach their peak sweetness during the warm months, making them an ideal choice for a refreshing snack or dessert. This Blackberry Pie Parfait delivers all the comforting flavors of homemade pie in a nutrient-dense, gut-friendly version. It is free of gluten, dairy, and refined sugar, so it supports your health goals without sacrificing flavor.

Many parfait recipes rely on sugary granola and dairy-based yogurt. This version swaps those common culprits for gut-nourishing ingredients that align with the AIP diet. Each spoonful layers antioxidant-rich blackberry compote, creamy coconut yogurt infused with a boost of Liquid Vitamin D3 with K2, and a homemade tigernut granola that provides a satisfying crunch and fiber-rich foundation.

A Delicious Gluten-Free Alternative: Tigernut Granola

The foundation of this parfait is a hearty tigernut granola. Tigernuts are not actually nuts! They are tiny tubers packed with prebiotic fiber that fuels beneficial gut bacteria. They contain resistant starch, which helps balance blood sugar and promotes digestive wellness. When combined with coconut flakes, fresh ginger, and a touch of citrus zest, the result is a naturally sweet granola that delivers texture and flavor without gluten or grains.

Blackberry Compote: Sweet, Tangy, and Gut-Friendly

Blackberries are one of nature’s most powerful berries. They offer a rich source of antioxidants, vitamin C, and fiber. This simple compote uses fresh blackberries, coconut sugar for a touch of sweetness, and a bright burst of lemon juice and zest. Tapioca flour thickens the compote naturally, keeping it compliant if you are following The Myers Way® or AIP diet. As the blackberries break down, they create a luscious sauce that mimics the filling of a classic pie.

Vitamin D3 with K2 Coconut Yogurt: A Creamy Immune Boost

Coconut yogurt makes a creamy, dairy-free alternative to Greek yogurt. Adding AMMD™’s Liquid Vitamin D3 with K2 provides an extra layer of functional nutrition. Many people struggle to get enough vitamin D through sun exposure alone, even during the summer. Vitamin D3 supports strong bones, balances the immune system, and boosts mood. K2 helps guide calcium to the bones and away from soft tissues. This combination is vital for optimal bone and cardiovascular health. Mixing it into coconut yogurt transforms this parfait into a supportive treat that helps maintain your wellness goals all year long.

Next, create the blackberry compote. In a medium saucepan, add fresh blackberries, coconut sugar, lemon juice, and zest. Warm over medium-low heat, stirring occasionally until the berries soften and the sugar dissolves. Combine tapioca flour with a splash of water to form a smooth slurry. Stir the slurry into the berries and continue to simmer until the compote thickens to a jam-like consistency. Remove from heat and allow it to cool to room temperature.
