In a large bowl, mix together tigernut flour, coconut flour, tapioca flour, Collagen Protein, coconut sugar, baking powder, lemon zest, cinnamon, and a pinch of salt.

Ingredients

Crust + Topping

  • 1 1/2 cups tigernut flour
  • ½ cup coconut flour
  • 1/4 cup tapioca flour
  • 1 scoop Collagen Protein
  • 1/2 cup coconut sugar
  • 1 teaspoon baking powder
  • 1 teaspoon lemon zest
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 10 Tablespoons coconut butter, melted

Filling

  • 4 1/2 cups blueberries, fresh is best*
  • 1/4 cup coconut sugar
  • 2 Tbsp tapioca flour
  • 1 Tablespoon lemon juice
  • 2 teaspoons lemon zest

Directions

  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper. This will make it easy to lift the bars out once they're ready. 
  2. In a large mixing bowl, combine the tiger nut flour, coconut flour, tapioca flour, Collagen Protein, coconut sugar, baking powder, lemon zest, ground cinnamon, and salt. Mix well to evenly distribute all ingredients.
  3. Add the melted coconut butter to the dry ingredients and stir until a crumbly dough forms. The mixture should hold together when pressed between your fingers.
  4. Set aside about 1 cup of the crumbly dough for the topping.
  5. Press the remaining dough evenly into the bottom of the prepared baking pan to form the crust. Use your hands or the back of a spoon to smooth it out and ensure an even layer.
  6. In a medium-sized bowl, combine the blueberries, coconut sugar, tapioca flour, lemon juice, and lemon zest. Toss gently to make sure the blueberries are evenly coated.
