Dessert For Breakfast
Dessert for breakfast sounds indulgent! However, thanks to wholesome ingredients, these blueberry pie bars are a smart way to start your day. This balanced, nutrient-dense breakfast, snack, or dessert satisfies your sweet tooth and fuels your body. It contains a few key ingredients that make it a nutritional powerhouse rather than just a sweet treat.
-
Coconut sugar helps keep your blood sugar balanced with its lower glycemic index.
-
Collagen Protein Powder supports healthy hair, skin, nails, joints, and gut lining.
-
Blueberries are rich in antioxidants and fiber, making them an ideal fruit for promoting overall health.
Pair a square with your favorite herbal tea or a mug of bone broth to start your day off on the right foot.
Gluten Free Pie Crust
Gluten free pie crust can be difficult to achieve. Many are too dry or too gummy. I found the perfect blend of gluten free flours to achieve the optimal gluten free pie crust. Tigernut, coconut, and tapioca flours create that desired flaky consistency. Tigernut flour is naturally sweet and rich in prebiotic fiber. It also supports digestive health. Coconut flour is a low-carb, high-fiber flour that adds structure and absorbs moisture. Tapioca flour helps bind the ingredients together and lends a light, chewy texture.
Many pie crusts use dairy to bind the ingredients together. Aside from gluten, dairy is the second food group I recommend everyone avoid. This is especially true if you have a thyroid or other autoimmune condition. Instead of using inflammatory butter or margarine, I opt for melted coconut butter. Coconut butter comes from pulverized coconut meat and contains a host of health benefits. Coconut is a good source of healthy fats and fiber. It also contains lauric acid, a compound that supports a robust immune system by fighting off microbes and pathogens.
Added Boost with Collagen Protein Powder
The real secret lies in the crust with the addition of AMMD™’s Collagen Protein powder. I combine one scoop into the crust batter. It gives this recipe an added nutritional punch!
Protein is the unsung hero of cellular function. Without it, your body would not be able to build or repair tissue. This hydrolyzed formula utilizes Type I & Type III collagen. Both of these collagen protein types are key in encouraging gorgeous hair, skin, and nails. Collagen protein powder also supports healthy insulin production. This helps curb cravings, which really comes in handy when you’re trying to embrace better eating habits.
Collagen protein powder also strengthens joint and muscle mass, helping you stay strong and active throughout the day. Another perk of collagen protein powder is the added gut support! Did you know that collagen peptides support the healthy building blocks of the intestinal wall? A stronger gut also equates to a stronger immune system — it’s a win-win all around!
Health Benefits of Blueberries
These blueberry pie bars would not be complete without the addition of fresh blueberries in the pie filling. Blueberries are considered a superfood, and for good reason!
-
Rich in antioxidants such as anthocyanins, which help protect your cells from oxidative stress.
-
Supports heart health by helping to reduce LDL cholesterol and improve blood pressure.
Promotes cognitive function, with studies showing a link between blueberry consumption and improved memory. -
Aids digestion due to their fiber content, which supports a healthy gut microbiome.
-
Low glycemic index, making them a smart fruit for blood sugar balance
With 4½ cups of blueberries in this filling, rest assured you are reaping all those benefits in every serving!
How To Make Blueberry Pie Bars
Making these delicious blueberry pie bars is easier than you think! First, start by preheating your oven to 350°F and lining an 8x8-inch baking pan with unbleached, chlorine-free parchment paper. This will make it easy to lift out the bars once they’ve cooled.

In a large bowl, mix together tigernut flour, coconut flour, tapioca flour, Collagen Protein, coconut sugar, baking powder, lemon zest, cinnamon, and a pinch of salt.

Stir in melted coconut butter until a crumbly dough forms. Set aside about a cup of this mixture for the topping.

Press the remaining dough into your baking pan to form the crust.

Then, in a separate bowl, you’ll begin the blueberry filling. Start by combining fresh blueberries, coconut sugar, tapioca flour, lemon juice, and lemon zest.

Spread this mixture over the crust, then sprinkle the reserved dough on top as a crumble.

Bake for 40–45 minutes, until the top is golden and the blueberries are bubbling. Allow the bars to cool completely in the pan before slicing—this will help them firm up and hold their shape.

Next time you are craving dessert for breakfast, whip up a batch of these nourishing blueberry pie bars.
