Additionally, Almond flour and coconut flour are excellent choices for grain and gluten free flour alternatives. They provide that soft, cookie dough-like texture without the addition of gluten. If you’re closely following AIP, you can swap the almond flour for cassava flour.

To get started making the Cookie Dough Easter Eggs, you’ll want to first prepare the gluten free cookie dough.

Ingredients to make Cookie Dough Easter Eggs - AMMD™

In a large bowl, you’ll combine tigernut butter, Double Chocolate Paleo Protein, almond flour, coconut flour, coconut butter, coconut oil, vanilla extract, and a pinch of sea salt. Stir until a thick, smooth dough forms. Gently fold in cocoa nibs for a chocolatey crunch.

Using a small ice cream scooper or spoon, shape the dough into oval “eggs” and place them on a chlorine-free parchment-lines baking sheet. Chill in the fridge for about 30 minutes, or until firm.

While the dough chills, melt vegan chocolate chips with a touch of coconut oil using a double boiler. Once the cookie dough eggs are firm, dip each one into the melted chocolate, ensuring a smooth, even coating. Use a fork to lift them out and return to the parchment paper. Sprinkle with flaky sea salt before the chocolate sets.

Ingredients

Cookie Dough 

  • 1 cup cup tiger nut butter 
  • 1 scoop Double Chocolate Paleo Protein 
  • 3/4 cup almond flour 
  • 1/4 cup coconut flour 
  • 3 tbsp coconut butter, melted
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract 
  • 1/8 tsp sea salt 
  • 1/4 cup cocoa nibs 

Chocolate Coating 

  • 1 cup vegan chocolate chips 
  • 1 tsp coconut oil 
  • Flaky sea salt for sprinkling 

Directions

  1. In a mixing bowl, combine the tiger nut butter, Double Chocolate Paleo Protein, almond flour, coconut flour, coconut butter, vanilla, and sea salt. Stir until it forms a thick dough. 
  2. Fold in the cocoa nibs.
  3. Scoop out small portions of the dough using an ice cream scooper and shape them into egg-like ovals. Place the shaped dough eggs on a baking sheet lined with parchment paper. Chill in the refrigerator for at least 30 minutes, or until firm. 

Prepare the Chocolate Coating 

  1. Using a double boiler, melt the vegan chocolate chips with the coconut oil.
  2. Take the chilled cookie dough eggs from the fridge and dip each one into the melted chocolate, ensuring they’re fully coated. Use a fork to gently lift each egg and place it back onto the parchment-lined sheet. 
  3. Before the chocolate sets, sprinkle the eggs with flaky sea salt to finish.

Chill and Enjoy 

  1. Refrigerate the coated eggs for another 15-20 minutes, or until the chocolate hardens.
