Ingredients

For the salad:

  • 4 celery stalks, very thinly shaved
  • 1 fennel bulb, shaved paper-thin (reserve fronds)
  • 1 apple
  • 4–5 radishes, thinly sliced
  • 2 tbsp fennel fronds or fresh dill
  • A few sprigs of fresh mint, chopped (option to add more if needed)

For the lemon vinaigrette:

  • 3 tbsp avocado oil or olive oil 
  • 1½ tbsp fresh lemon juice
  • 1 tbsp apple cider vinegar
  • 2-3 servings Liquid Vitamin D3/K2
  • 1 tsp lemon zest
  • 1 small garlic clove, finely grated
  • ½ tsp sea salt (or to taste)

Directions

  1. Use a mandoline or vegetable peeler to get everything whisper-thin—this is what makes the texture special.
