Bowl of Ginger Peach Gazpacho - AMMD™

Cool down with this refreshing Ginger Peach Gazpacho, a nightshade-free, AIP-friendly soup packed with ingredients that support a healthy inflammatory response and immune system.

Do you ever crave something cold and refreshing but you aren’t looking for a dessert? Hydrating meals are important during the hot, summer months. There are a few recipes that provide savory taste but are as cooling as my gazpacho. This Peach Gazpacho is a quenching, vibrant, and nutrient-packed option that fits seamlessly into The Autoimmune Solution™ Protocol.

Unlike traditional gazpacho, which often includes tomatoes, bell peppers, and other nightshades, this version is nightshade free, gluten free, dairy free, and refined sugar-free. It is suitable for those navigating autoimmune conditions or simply seeking more nourishing foods.

What sets this gazpacho apart is the addition of Liposomal Curcumin, a highly bioavailable form of curcumin, the active compound in turmeric. By including it in your meals, you receive a targeted boost that supports a healthy inflammatory response to combat oxidative stress. It is a flavorful, functional twist on a classic chilled soup.

What Is Gazpacho?

Gazpacho is a chilled soup that originates from Spain, traditionally made with a base of blended tomatoes, garlic, vinegar, and olive oil. While the conventional recipe includes nightshades such as tomatoes and bell peppers, those ingredients can be inflammatory triggers for individuals with autoimmune disease or gut imbalances.

This nightshade-free Peach Gazpacho offers a cooling and zesty alternative. It brings together antioxidant-rich fruits, vegetables, herbs and spices that promote immune balance. Plus, with the addition of Liposomal Curcumin, this recipe becomes a powerful tool for supporting joint health, optimal inflammatory response, and cellular protection.

Ginger Peach and Carrot

The vibrant combination of ginger, peaches, carrots, and cucumber offers a naturally sweet and savory gazpacho with a subtle kick from fresh ginger and garlic. Served cold, this soup is hydrating, bright, and bursting with flavor.

  • Peaches offer fiber, vitamin C, and polyphenols that help support healthy digestion and immune balance.

  • Carrots are rich in beta-carotene, which the body converts into vitamin A, which is essential for immune health and healthy skin.

  • Ginger adds a warming contrast to the chilled soup while offering digestive benefits.

  • Cucumber is hydrating and cooling, providing a crisp base that blends seamlessly with the other ingredients.

The balance of sweet and savory, along with the zing from ginger and lime juice, makes this ginger peach gazpacho a satisfying recipe, especially when served chilled on a warm, summer afternoon.

Liposomal Curcumin

Curcumin, the active compound in turmeric, has been used for centuries to combat inflammation. However, standard curcumin is poorly absorbed by the body. That is why I recommend Liposomal Curcumin, which uses advanced delivery technology to enhance absorption and bioavailability.

Incorporating Liposomal Curcumin into your meals is a simple yet powerful way to elevate your nutritional intake and support your immune system, joints, and overall well-being. Just two servings added to this gazpacho recipe infuses it with the therapeutic power of curcumin, without altering the flavor or texture.

By making this nutrient-dense supplement part of your daily lifestyle, you are taking an active role in supporting your body’s natural inflammatory response.
