Hamburger Macaroni Soup

Ingredients

  • 1/2 onion finely diced
  • 1 tbsp coconut oil or avocado oil
  • 1 lb ground beef
  • 1 1/2 tsp sea salt
  • 5 cups water
  • 4 scoops Beef Bone Broth Collagen
  • 1 parsnip peeled and chopped
  • 2 carrot peeled and chopped
  • 3 stalks celery chopped
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 1 1/2 cups gluten-free pasta choice

Directions

  1. In a large soup pot over medium heat, add the onion and oil. Cook for about 5-10 minutes, stirring occasionally, until the onion starts to soften and turns translucent.
  2. Add the ground beef and salt to pot with the onion. Use a wooden spoon to crumble the beef as it cooks.
  3. Once beef is no longer pink, add the remaining chopped vegetables, water, bone broth collagen powder, basil, and garlic powder. Stir to combine and bring to a boil.
  4. Once boiling, add the uncooked macaroni noodles, and cover the pot with a lid. Reduce the heat to medium low, and cook for 12-15 minutes until the noodles are soft.
  5. Remove from the heat and serve immediately.
