If you have ever wondered what a posset is, you are not alone. A posset dessert dates back to England in the Middle Ages. It was originally made with hot milk curdled with wine or citrus. Over time, it evolved into a simple cream-based dessert thickened with lemon juice.

Traditional lemon posset recipes rely on heavy cream and refined sugar. The acid from the lemon juice reacts with the cream to create a naturally thick texture. The result is smooth, rich, and spoonable without the need for gelatin or starch.

While classic versions are not suitable for many dietary needs, it is easy to create a dairy-free lemon posset that aligns with an autoimmune protocol approach.

Dairy Free Lemon Posset

This version replaces heavy cream with full-fat coconut cream. Coconut cream provides a rich texture and mild flavor that pairs well with fresh lemon. It is also a great option if you are following an AIP diet.

Coconut contains beneficial fats that help support energy and satiety. It also creates the same silky consistency you expect from a traditional posset dessert. Fresh lemon juice adds brightness, while lemon zest enhances the citrus aroma.

Instead of refined sugar, this recipe uses pure stevia leaf. This helps keep the dessert low in sugar while still offering a pleasant sweetness. A pinch of sea salt balances the flavors and brings everything together.

How To Make Lemon Posset

This lemon posset recipe is simple and requires only a few steps. 

  • Start by preparing your lemon cups. Slice each lemon in half lengthwise and gently scoop out the flesh. Reserve the juice for the recipe. Trim a small slice off the bottom so each half sits flat. Place them in the refrigerator to chill while you prepare the filling.
  • Next, add the coconut cream, stevia, and lemon zest to a small saucepan. Warm the mixture over low heat. Stir until smooth and fully combined. Do not let it boil. Gentle heat is all you need.

  • Remove the saucepan from heat. Stir in the fresh lemon juice and a pinch of sea salt. Allow the mixture to cool for about 10 to 15 minutes. This step helps preserve the potency of the vitamin C.
  • Once cooled, stir in the Liposomal Vitamin C until fully incorporated. Pour the mixture into your prepared lemon cups. Transfer them to the refrigerator and allow them to set for 3 to 4 hours or overnight.

  • When ready to serve, garnish with fresh raspberries or blueberries and a sprinkle of lemon zest. The final result is creamy, bright, and refreshing.

Ingredients

  • 1 cup full-fat coconut cream (thick part only)
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1-2 tbsp Liposomal Vitamin C
  • Pure stevia leaf extract, to taste (start with a small pinch or a few drops and adjust)
  • 2 tsp lemon zest
  • ⅛ tsp sea salt
  • 2–3 whole lemons (for serving cups)

Garnish: 

  • Raspberries or blueberries 
  • Lemon Zest

Directions

  1. Prep your lemon cups by slicing lemons in half lengthwise, gently scooping out the flesh (reserve juice for recipe). Trim a small slice off the bottom so they sit flat and chill in the fridge while you prepare the filling
  2. In a small saucepan, add coconut cream, pure stevia, and lemon zest on low heat, stirring until smooth and fully combined.  Avoid boiling—just gently warm
  3. Remove cream from the heat and stir in fresh lemon juice and a pinch of sea salt
  4. Let mixture cool for about 10- 15 minutes (important so the vitamin C stays potent)
  5. Stir in 2 tsp Liposomal Vitamin C until fully incorporated.
  6. Pour mixture into prepared lemon cups
  7. Refrigerate for 3–4 hours (or overnight) until set and creamy
  8. Garnish with Blueberries and/or raspberries, and lemon zest curls for a pretty finish.
