Cut chilled palm shortening into the dry ingredients until the mixture resembles coarse crumbs. Stir in apple cider vinegar and iced water, one tablespoon at a time, until the dough comes together. Shape into a disk, wrap, and refrigerate for one hour.

While the dough chills, prepare the filling. Thinly slice three ripe peaches and toss them with lemon juice, lemon zest, coconut sugar, vanilla extract, cardamom, arrowroot starch, and a pinch of sea salt. Brush the crust with melted coconut oil to help it turn golden.

Ingredients

For the Crust:

  • ½ cup palm shortening, chilled
  • 1 cup cassava flour
  • ⅓ cup arrowroot flour
  • ¼ cup coconut flour
  • 1 scoop Vanilla Bean Paleo Protein
  • 2 tbsp coconut sugar
  • ½ tsp cardamom
  • 1 tsp sea salt
  • 1 tbsp apple cider vinegar
  • 5-6 tablespoons iced water

For the Filling:

  • 3 peaches, thinly sliced
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 2 tbsp coconut sugar
  • 1 tsp vanilla extract 
  • 1 tbsp arrowroot starch
  • ½  tsp cardamom
  • ⅛ tsp sea salt

Directions

Prepare the crust 

  1. Combine the cassava flour, arrowroot flour, coconut flour, Vanilla Bean Paleo Protein, coconut sugar, cardamom and sea salt in a large bowl. 
  2. Cut the chilled palm shortening into the dry ingredients using a pastry cutter or your fingertips. Work it until the mixture resembles coarse breadcrumbs. 
  3. Add the apple cider vinegar and iced water (one tablespoon at a time), gently stirring after each addition. Stop when the dough comes together and is slightly sticky but still manageable. 
  4. Shape the dough into a disk, wrap it in parchment paper or plastic wrap, and refrigerate for at least an hour.

Prepare the Filling 

  1. Preheat your oven to 350°F (175°C).
  2. While the dough chills, thinly slice the peaches and toss them in a bowl with lemon juice, coconut sugar, vanilla extract, cardamom and arrowroot starch. 
  3. Place the dough between two sheets of parchment paper and roll it into a 9–10-inch circle. Don't worry if it’s not perfectly round—the rustic look is part of a galette’s charm.
  4. Transfer the dough (with the bottom parchment paper intact) to a baking sheet. Layer the pear slices in the center of the crust, leaving a 1.5–2-inch border around the edges.
  5. Gently fold the crust edges over the filling, pleating as you go to form a rustic edge.
  6. Brush the crust with melted coconut oil for extra golden color.
  7. Bake the galette for 35–40 minutes, or until the crust is golden brown.
