Stack of glazed Peppermint Mocha Donuts - AMMD™

Indulge in Peppermint Mocha Donuts that are gluten free, dairy free, and AIP friendly. Made with Peppermint Mocha Paleo Protein, these donuts are festive, healthy, and packed with protein.

The holiday season is full of festive flavors, and peppermint mocha is at the top of the list. Traditionally, donuts are a holiday indulgence. They are often made with refined sugars, wheat flour, and dairy. They are fried and full of inflammatory ingredients. Most donuts are neither gluten free nor dairy free.

This Peppermint Mocha Donut recipe is different. It is gluten free, dairy free, and AIP friendly. It also provides a boost of protein, making it a wholesome treat to enjoy during the holidays. These donuts capture the classic peppermint mocha flavor while supporting your health and wellness goals.

Gluten Free Donuts

These donuts are made with a combination of cassava flour, tigernut flour, and tapioca starch. Cassava flour is naturally gluten free and easy to digest. Tigernut flour provides fiber, antioxidants, and a slightly sweet flavor. Tapioca starch gives the donuts a light, fluffy texture without using wheat flour.

Cacao powder adds rich chocolate flavor and is packed with antioxidants. Coconut sugar provides sweetness while maintaining a lower glycemic index compared to refined sugar. Flax eggs are used instead of traditional eggs, making the donuts AIP compliant. They also add omega-3 fatty acids and fiber.

Coconut oil replaces butter and adds healthy fats that support hormone balance and brain health. Apple cider vinegar reacts with baking soda to help the donuts rise and keeps them tender. Each of these ingredients contributes to a donut that is both nutritious and satisfying.

Peppermint Protein Powder

Adding Peppermint Mocha Paleo Protein takes these donuts to the next level. Each scoop provides 21 grams of clean, grass-fed, hydrolyzed beef collagen protein. This protein supports healthy hair, skin, nails, and joint function. It also helps maintain muscle mass and provides a sustained source of energy.

Peppermint protein powder gives the donuts their signature peppermint mocha flavor without adding artificial ingredients. It blends seamlessly with the other gluten free flours, creating a rich and moist texture.

Dairy Free Glaze

The peppermint glaze is simple and delicious. It combines dairy free dark chocolate chips with coconut oil and peppermint extract. Dairy free dark chocolate is rich in antioxidants and contains no dairy or soy. Coconut oil adds medium chain triglycerides that support metabolism and brain health.

The peppermint extract enhances the holiday flavor and provides a refreshing aroma. Once melted and combined, the glaze is poured over the cooled donuts. You can optionally sprinkle them with flaky sea salt, cacao nibs, or coconut flakes dusted in beet powder for a festive touch.
