Ingredients

  • ¾ cup tigernut flour
  • 1/4 cup coconut flour
  • 2 scoops Pumpkin Spice Paleo Protein
  • ½ cup pumpkin puree
  • ⅔ cup tigernut butter
  • ¼ cup dark chocolate chips for decorating

Directions

  1. In a medium bowl, combine tigernut flour, coconut flour, and protein powder.
  2. Stir in pumpkin puree and tigernut butter until a thick dough forms. If too dry, add 1–2 tsp water or extra pumpkin puree; if too sticky, add a little more tigernut flour.  
  3. Roll the dough into 1-inch balls and place on a parchment-lined tray.
  4. To decorate your truffles like little pumpkins, use a toothpick, skewer, or knife to press indents into the sides of the truffle to look like the ridges you find on pumpkins. 
  5. Press one chocolate chip into the top of your truffle for the stem.
  6. Refrigerate for at least 30 minutes to firm up.
  7. Keep in an airtight container in the fridge for up to 1 week, or freeze for up to 2 months.
