  • Mix ground flax with water. Let sit for 5 to 10 minutes until it forms a gel
  • In a bowl, combine cassava flour, tigernut flour, baking soda, sea salt, and Strawberries & Cream Paleo Protein

  • In a separate bowl, whisk melted coconut oil, tigernut butter, stevia, vanilla, and flax eggs
  • Fold dry ingredients into wet ingredients until fully combined

Ingredients

For the Blondies:

  • 1 cup cassava flour
  • 1/2 cup tigernut flour
  • 1 scoop Strawberries & Cream Paleo Protein
  • 1/2 tsp baking soda
  • 1/8 tsp sea salt
  • 1/2 cup coconut oil, melted and slightly cooled
  • 1/4 cup powder stevia (adjust to taste)
  • 1/2 cup tigernut butter
  • 3 flax eggs 3 tbsp ground flax + 9 tbsp water, mixed and rested 5–10 min)
  • 1 tbsp vanilla extract
  • 1 cup freeze-dried strawberries, crushed

For the Strawberry Glaze:

  • 5 tbsp coconut butter, melted
  • 1 1/2 scoops Strawberries & Cream Paleo Protein

Garnish:

  • Freeze-dried strawberries (crushed, whole, or powder) for sprinkling. 

Directions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Mix ground flax with water, let sit 5–10 minutes until gel-like.
  3. In a medium bowl, combine cassava flour, tigernut flour, baking soda, sea salt, and Strawberries & Cream Paleo Protein powder.
  4. In another bowl, whisk melted coconut oil, tigernut butter, stevia, vanilla, and flax eggs until smooth.
  5. Fold dry ingredients into wet ingredients until fully combined.  
  6. Fold in crushed freeze-dried strawberries.
  7. Pour batter into the prepared pan, and smooth the top. Bake 22–28 minutes, or until edges are golden and a toothpick comes out mostly clean.
  8. Let blondies cool completely in the pan.
  9. Make glaze: Melt coconut butter, stir in strawberry powder. Drizzle over cooled blondies.
  10. Sprinkle with extra freeze-dried strawberries 
  11. Slice into squares and enjoy!
