Cool down with these refreshing Turmeric and Ginger Popsicles made with zesty lemon, creamy coconut milk, and freshly juiced turmeric root. Support a healthy inflammatory response while indulging in a delicious treat!
With summer right around the corner, warmer days are quickly approaching. Nothing hits the spot like a cool, refreshing popsicle. They are a quick, easy, and versatile treat to satisfy the whole family. I love to make them for Elle as a healthy treat while she’s out of school for the summer.
Unfortunately, most popsicles you buy from the store are far from functional and clean. They are typically packed with refined sugars, artificial dyes, and synthetic ingredients. If you're following The Myers Way®, you know I always encourage choosing nutrient dense and AIP-friendly options that support your gut, immune system, and overall health.
That’s why I’m happy to share my recipe for Turmeric and Ginger Popsicles. These golden milk frozen treats are free of gluten, dairy, and refined sugar. They also support your body's inflammatory response with the power of turmeric, along with ginger and lemon. These “healthy popsicles” are a functional alternative to the typical sugary popsicles. They are also a great way to sneak in some extra nutrients for you and your little ones.
Healthy Popsicles
You may have noticed the surge in popularity of functional beverages and mocktails over the past few years. These drinks deliver more than just hydration. From collagen-infused waters to adaptogenic teas, we’re seeing a shift toward beverages that support health in targeted ways. Healthy popsicles are a natural extension of this trend. Not only are they easy to make and are incredibly refreshing, but they also provide meaningful health benefits in every bite.
This particular recipe is packed with potent ingredients such as turmeric and ginger. Similar to golden milk, these popsicles are just the frozen form. Plus, you get extra joint and inflammatory support from fresh turmeric root. Curcumin is one of the most powerful compounds found in turmeric. It supports a healthy inflammatory response and optimal function of your immune system.
Turmeric and Ginger
Turmeric and ginger are a dynamic duo. Both roots are classified as rhizomes. They are an underground plant that grows just below the surface of the soil, containing beneficial compounds. Turmeric and ginger have been used for centuries in Traditional Chinese Medicine through herbal formulas to help address joint pain, arthritis, and menstrual irregularities.
Together, these roots offer synergistic benefits. Turmeric contains curcumin, a compound known for its powerful ability to support a healthy inflammatory response. Ginger is widely recognized for its antioxidant properties and for soothing the digestive tract. Together, they can help reduce occasional bloating, aid in digestion, and promote immune health. Their vibrant flavors blend beautifully with citrus and coconut, making them the perfect match for a nourishing summer treat.
Stevia Powder
Instead of using sugar, I swap it for stevia powder. Stevia is a natural sweetener derived from the leaves of the Stevia rebaudiana plant. Unlike cane sugar or high-fructose corn syrup, stevia does not spike your blood sugar, feed Candida, or disrupt your gut flora. This makes it a wonderful option for those following The Myers Way® or AIP diet.
It’s important to note that you must choose pure stevia powder, without added fillers or sugar alcohols. Aspartame, erythritol, and sucralose are harmful synthetic sweeteners commonly used as sugar substitutes. They can irritate your gut. Pure stevia has a clean, sweet taste and is much more potent than sugar. It’s actually 300 times sweeter, so a little goes a long way!
Added Inflammatory Support
What truly sets these healthy popsicles apart is the addition of fresh turmeric root juice. Turmeric gives these popsicles that beautiful golden color. Similar to a golden milk latte, these popsicles are just a frozen variation. This turns a simple summer treat into a therapeutic tool to support a healthy inflammatory response.
Curcumin is the heart of turmeric root's health benefits. It’s the most active compound, known for potent antioxidant effects and for reducing inflammation. Whether you are dealing with occasional joint stiffness or chronic inflammation, adding turmeric root can be a powerful ally in your wellness routine.
How To Make Turmeric and Ginger Popsicles
Making popsicles is quick and easy. All you need are a few ingredients, popsicle molds, and sticks. You can have fun with these by trying different molds.

To get started, you’ll first pour two cans of coconut milk into a medium saucepan, then add two tablespoons of freshly grated ginger. Gently simmer this mixture for about five minutes, allowing the ginger to infuse into the creamy coconut milk. Once it's fragrant, remove the pan from the heat, let it cool slightly, and strain out the ginger.

Next, you’ll stir in half cup of lemon juice, two tablespoons of lemon zest, four tablespoons of stevia powder, and six teaspoons of freshly juiced turmeric root (or you can substitute ground turmeric powder). Mix until everything is fully combined.

Carefully pour the mixture into your popsicle molds, insert the sticks, and freeze for 4 to 6 hours. Once they’re fully frozen, simply pop them out of the molds and enjoy!

These healthy popsicles are creamy, zesty, and just sweet enough. They are the perfect way to cool off while also giving your body the nutrients it needs to thrive. Pair these with my Liposomal Turmeric Bites for an extra boost of wellness!
