Sweet Potato Bites with Guacamole Cream

These AIP sweet potato bites are an amazing appetizer or snack, especially when served with delicious dairy-free guacamole cream on top. This easy appetizer takes just a half hour to make from scratch and is very healthy. It is AIP- and paleo-friendly, gluten-free, and vegan, and most importantly—so delicious you and your guests will keep reaching for more!

Healthy sweet potato appetizer

The base for this appetizer is tasty little roasted sweet potato circles, seasoned with an AIP-friendly taco spice mixture. The seasoning has garlic and onion powder, oregano, cumin, sea salt and pepper, and has the perfect amount of smoky and salty flavor to complement the subtle sweetness of sweet potatoes.

Sweet potatoes are a healthy tuber that is loaded with fiber, antioxidants, vitamins, and nutrients. The fiber in sweet potatoes keeps you feeling full, promotes healthy digestion, and supports good bacteria in the gut. Beta-carotene in sweet potatoes converts to Vitamin A in the body and helps keep our immune system healthy. Manganese helps support healthy inflammatory response and bone mineral density. Potassium helps support healthy blood pressure levels and regulate muscle and heart contractions. Vitamin C supports a healthy immune system.

Serving guacamole cream on sweet potatoes is so much healthier than eating guacamole with chips!

Try to choose sweet potatoes that are long, thin, and an even thickness so that all the sweet potato bites are a similar size. It is up to you whether you peel the sweet potatoes or not. The skin of the sweet potato contains a lot of fiber, so I choose to scrub the sweet potatoes really clean and keep the skin on. If you prefer peeling the skin for a softer texture, you can do that.

Make sure to slice the sweet potatoes into thin, even circles about ¼-inch thick so they bake evenly. You can use a knife or a mandoline slicer to do this.

The sweet potatoes need only 15 minutes of roasting time because they are sliced very thin. While they are roasting, you can prepare all the ingredients for the guacamole cream that will be the topping for these sweet potato bites.

I like to roast a clove or two of garlic with the sweet potatoes to use in the guacamole cream. It adds a more subtle and delicious garlic flavor and blends easily into the avocado cream.

AIP guacamole cream

The guacamole cream for these AIP sweet potato bites is so delicious and zesty! It is made with a ripe Hass avocado, roasted garlic, lime juice, fresh cilantro leaves, unsweetened plain coconut yogurt, and a little bit of the AIP taco spice mixture that is used to season the sweet potatoes. It’s the perfect blend of creamy and zesty.

Simply puree all the ingredients in a food processor until you reach a desired texture. You can leave it a little chunky, or make a deliciously smooth cream.

This guacamole cream is loaded with healthy monounsaturated fats from the avocado, which helps reduce bad cholesterol and lower blood pressure. It also contains folate, which is a necessary nutrient for pregnant women, as well as potassium and fiber.

The coconut yogurt makes this guacamole cream very smooth and creamy. Make sure to choose store-bought coconut yogurt that doesn’t have any sweeteners or unhealthy thickeners, or make your own.

Once the sweet potatoes are roasted, add a dollop of guacamole cream on top of each sweet potato bite, garnish with a cilantro leaf, and they’re ready to serve! These sweet potato bites with guacamole cream will take your upcoming party to the next level.

Topping ideas for sweet potato bites

This AIP sweet potato bites recipe can be customized to your liking with different toppings. Try adding cooked crumbled bacon on top, or chopped cucumbers for a little texture. You can also try garnishing with different herbs, such as chopped parsley, chives, or green onions.

Ingredients

For the Sweet Potato Bites
  • 1 lb sweet potato (preferably long and thin)
  • 1 clove garlic
  • 1 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
For the Guacamole Cream
  • 1 avocado
  • 1/4 cup unsweetened plain coconut yogurt
  • 1 tbsp lime juice
  • 1/4 cup cilantro leaves plus extra for garnish

Instructions

  1. Preheat oven to 375F. Brush a large baking sheet with olive oil, reserving half the olive oil for later.

  2. Slice the sweet potato into ¼-inch thick circles using a mandoline slicer or a knife.

  3. Arrange the sweet potatoes on the oiled baking sheet and brush the tops of the sweet potatoes with the rest of the oil. Place the peeled whole clove of garlic on the baking sheet.

  4. In a small bowl, mix together the salt, black pepper, cumin, garlic powder, onion powder, and oregano. Season the tops of the sweet potatoes with a pinch of this spice mixture (you will have some remaining and will use it in the guacamole cream).

  5. Roast the sweet potatoes for 15 minutes, or until fully cooked.

  6. In a small food processor, combine the peeled avocado, coconut yogurt, lime juice, cilantro leaves, ½ tsp of the seasoning mixture, and the roasted garlic clove. Process until smooth.

  7. To serve, top each sweet potato slice with the creamy guacamole and garnish with fresh cilantro leaves.
