Irish Stuffed Cabbage Wraps

Ingredients
- 1 1/2 lbs 681.00 g ground beef
- 2 cups 480.00 ml bone broth
- 3 cloves garlic minced
- 1 onion diced
- 5 cups 1200.00 ml cauliflower 1 head, riced
- 1 cabbage
- 1 cup 240.00 ml parsley finely chopped
- 1/4 cup 60.00 ml dill finely chopped
- 1/2 cup 120.00 ml beets chopped
- 2 carrot chopped into about 1/2 cup
- 1 tsp 4.93 ml sea salt
- 1/8 tsp 0.62 ml ground black pepper
Instructions
- Steam cabbage 6-8 minutes or until soft.
- In the meantime, in a blender, pulse chopped beets and carrots until finely riced.
- Next, pulse cauliflower in blender to “rice” as well.
- In a separate bowl, mix the ground meat, garlic, onions, parsley, riced beets, carrots, and cauliflower, and sea salt and pepper.
- Once cabbage has cooled, peel off leaves and discard core.
- Add a heaping spoonful of the meat mixture and roll leaves, folding corners in first then roll lengthwise and place in a baking dish.
- Pour bone broth into baking dish, sprinkle cabbage with sea salt and pepper. Bake at 350 degrees F covered for 60-90 minutes.
