BBQ Meatloaf
The classic meatloaf just got a makeover! This juicy, egg free meatloaf uses a variety of nutritious veggies for added flavor and nutrition. It also uses coconut flour, making this gluten free meatloaf Paleo-friendly! I also made sure to include a tasty BBQ glaze that is The Myers Way®-approved. This BBQ meatloaf is a great easy weeknight dinner idea. You can prepare it and place it in the oven in under 15 minutes!
Gluten Free Meatloaf
Traditional meatloaf recipes contain eggs, wheat, and sometimes dairy. These ingredients can cause an inflammatory response and gut issues. Furthermore, they are not compliant with The Myers Way®. However, this gluten free meatloaf comes without all of those fillers. Instead of wheat flour, I use coconut flour to help bind it together. The rest of the ingredients are flavorful additions. I love the taste of fresh onion, garlic, and Italian seasoning.
The result is a delicious, flavorful gluten free meatloaf that makes a great high-protein addition to your dinner! Ground beef is a great source of amino acids and protein. Your body needs protein to build and repair muscle tissues. It also contains vitamins B6, B12, zinc, riboflavin, and niacin. These essential nutrients help promote a healthy immune system, digestive system, and nervous system. Red meat also contains iron, which is important for healthy blood cells.
This recipe uses 85% lean ground beef. This percentage has enough fat to give the meatloaf lots of flavor, but not enough to make it greasy. Make sure to get organic, grass-fed beef. Also, make sure it is antibiotic and hormone-free. This gives your gluten free meatloaf the most health benefits.
How To Make BBQ Meatloaf
It’s a cinch to make BBQ meatloaf. That’s why it makes a great weeknight meal! All you need to do is combine all the ingredients in a bowl and mix together.
Then, place in a loaf pan lined with parchment paper and brushed with oil. Bake at 375°F for about 45 minutes. Remove the egg-free meatloaf from the oven and brush with The Myers Way®-approved BBQ glaze. Pop it back into the oven for just a few minutes to incorporate the flavors.
The Myers Way®-Approved BBQ Glaze
For this recipe, I used the same BBQ glaze that I used in this BBQ Chicken Flatbread. I added a little of the BBQ sauce into the meatloaf mixture to make it juicy and flavorful. Then, I turned some of the sauce into a zesty BBQ glaze by adding just a little bit of apple cider vinegar to the sauce.
Brush this BBQ glaze onto the meatloaf after 45 minutes of baking. Then, bake for another 10-15 minutes. The glaze will thicken and make a delicious sticky-sweet topping for the meatloaf.
Serving BBQ Meatloaf
It’s tempting to serve this BBQ meatloaf right away, but I recommend letting it cool down for a few minutes. If you don’t let it cool, it will fall apart!
Once it’s sliced, this gluten free meatloaf is delicious served over cheesy cauliflower bake. Make sure to spoon the juices from the pan over the meatloaf for extra flavor.
This egg free meatloaf recipe reheats really well and makes great leftovers. I recommend slicing the meatloaf before putting it in the refrigerator. That way, it is ready to reheat and serve.
