Add the dark chocolate chunks and one tablespoon of coconut oil. Stir frequently until the chocolate is smooth and glossy.

Next, create the chocolate base. Spoon about one teaspoon of melted chocolate into each lined mini muffin cup. Place the tray in the freezer for five to seven minutes to set. While the chocolate hardens, gently warm the coconut butter until it is stirrable. Mix in the Peppermint Mocha Paleo Protein and stir until smooth, thick, and spreadable, resembling a fudge-like consistency.

  8. Cover with the remaining melted chocolate, making sure the filling is fully sealed.
  9. Tap the muffin tray on the counter to smooth the tops and release air bubbles.
  10. Freeze for 15–20 minutes until firm.
