Ingredients

  • 2 medium or large butternut squash, halved lengthwise and seeded
  • 4 tbsp olive oil, divided
  • 1/2 cup apple cider
  • 1 scoop Unflavoured Paleo Protein
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 14 oz spicy Italian sausage, crumbled
  • 1 cup kale, chopped
  • ½ cup dried cranberries
  • 1 medium apple, diced small
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme
  • ¼ teaspoon sea salt
  • Freshly ground black pepper, to taste

Directions

  1. Preheat your oven to 400°F (200°C).
  2. Drizzle the cut sides of the butternut squash with 2 tbsp olive oil, and sprinkle with salt and pepper.
  3. Place cut side down on a parchment-lined baking sheet and roast for 30–40 minutes, or until tender and golden around the edges.
  4. While the squash roasts, heat 2 tbsp of olive oil in a large skillet over medium heat.
  5. Add the onion and cook until soft and translucent, about 3–4 minutes.
  6. Stir in the garlic and cook for another 30 seconds.
  7. Add the sausage, breaking it up with a spoon, and cook until browned and fully cooked through, about 5–7 minutes.
  8. Stir in the apple and dried cranberries and cook for 2–3 minutes until slightly softened.
  9. Add the kale and cook until wilted and season rosemary, thyme, salt and pepper
  10. Add 1 scoop of Unflavoured Paleo Protein to the apple cider and whisk until combined.  Add to the sausage mixture and cook for another 5 minutes to reduce. 
  11. Once the squash is done, flip them cut side up and spoon our the middle of the squash.
  12. Spoon in the sausage mixture evenly into each squash half, pressing gently to fill the cavity.
  13. Bake Again (Optional):  For a more cohesive dish, return the stuffed squash to the oven for 10 minutes to warm through and meld the flavours.
  14. Serve warm, garnished with a drizzle of olive oil or a sprinkle of fresh herbs if desired.
