What is Panna Cotta?

What is panna cotta, and how does my version support your health? Traditional panna cotta recipes use heavy cream and sugar. It also uses gelatin and vanilla extract. This eggless Italian custard can also be quite versatile. Many people enjoy coffee, mango, chocolate, and even cider flavors.

This dairy-free panna cotta skips the milk and heavy cream. Dairy is one of the highly inflammatory foods I recommend everyone avoid. This recipe uses full-fat coconut milk, a rich source of vitamins and minerals. It also contains medium-chain triglycerides (MCTs), which support healthy energy metabolism. Research suggests the lauric acid and free radical scavengers found in coconut milk may also promote brain and immune function.

Instead of using processed white sugar, this recipe uses a few drops of stevia as a sweetener. Stevia comes from a leaf and contains phytocompounds that support healthy blood sugar, pressure, and more. It is also 200-300 times sweeter than sugar. This means you only need a small amount to get the job done. The fresh blueberries create a naturally sweet, blue-colored layer to this dairy-free panna cotta. Blueberries are a summer fruit rich in free radical scavengers, fiber, and vitamins. I make sure to use grass-fed gelatin to get the dessert to hold its shape.

The beetroot, aronia berry, acai, and pomegranate add a delicious fruity flavor to this all-star 4th of July dessert. They also add the perfect red hue to the top layer of this dairy-free panna cotta.

How To Make Triple Layer Panna Cotta

You are going to make this dairy-free panna cotta in three separate layers. After each layer chills, you simply stack the layers and chill for an additional two hours before serving. Consider topping with fresh berries, mint leaves, coconut whipped cream, or toasted coconut flakes. 

  • Start with the bottom blue layer. Add the blueberries, coconut milk, vanilla, lemon, and stevia to your food processor. Blend until smooth.

  • Pour the mixture into a saucepan. Whisk in gelatin and bring to a gentle simmer for two minutes. Avoid overcooking.
  • Divide evenly into serving glasses and chill in the refrigerator for 20–30 minutes, or until set.
  • For the Vanilla Coconut Layer (Middle), combine ingredients in a saucepan and simmer for two minutes, whisking slowly.

  • Remove from heat and let cool slightly. That way, it doesn’t melt the blue layer.
  • Slowly pour over the blueberry layer and return to the refrigerator to chill for another 20–30 minutes.
  • As for the top red layer, start by blending the berries, coconut milk, and stevia until smooth.
  • Pour into a saucepan. Whisk in the grass-fed gelatin and Organic Reds and simmer for two minutes.

  • Remove from heat and cool slightly. Pour over the white layer and return to the refrigerator for at least two hours before serving.

Ingredients

Blue Layer (Bottom)

  • 1 cup canned full-fat coconut milk
  • 1/4 cup blueberries
  • 1 tsp vanilla
  • 1 1/4 tsp grassfed gelatin 
  • Tiny squeeze of lemon
  • 8–12 drops liquid stevia, to taste

White Vanilla Coconut Layer (Middle)

  • 1 cup canned coconut milk
  • 1 tsp vanilla
  • 1 1/4 tsp grassfed gelatin 
  • 8–10 drops liquid stevia

Red Layer (Top)

  • 1 cup canned coconut milk
  • 1/2 cup strawberries or raspberries
  • 1 scoop Organic Reds
  • 1 1/4 tsp grassfed gelatin 
  • 10–12 drops liquid stevia, to taste

Optional Toppings

  • Toasted coconut flakes
  • Fresh berries
  • Coconut whipped cream
  • Tiny mint leaves

Directions

Blue Layer (Bottom)

  1. Blend blueberries, coconut milk, vanilla, lemon, and stevia until smooth.
  2. Pour into a saucepan and whisk in gelatin.
  3. Bring to a gentle simmer for 2 minutes.
  4. Divide evenly into serving glasses.
  5. Chill 20–30 minutes until mostly set.

White Vanilla Coconut Layer (Middle)

  1. Heat all ingredients in a saucepan.
  2. Simmer gently for 2 minutes while whisking.
  3. Let cool slightly so it doesn’t melt the blue layer.
  4. Slowly pour over the blueberry layer.
  5. Chill another 20–30 minutes.

Red Layer (Top)

  1. Blend berries, coconut milk and stevia until smooth.
  2. Pour into a saucepan and whisk in Organic Reds and gelatin.
  3. Simmer gently for 2 minutes.
  4. Cool slightly, then pour over the white layer.
  5. Chill at least 2 hours before serving.
