For those of you who are able to eat nuts, or if you have been following The Myers Way® Autoimmune Solution Protocol, here is a delicious alternative! Use two chicken breasts if you are making these Cassava Flour Tortilla Chicken Tacos for an entire meal, and add a side dish (personally, I enjoy this with a side of roasted zucchini). Lettuce or cabbage leaves are another gluten free ‘tortilla’ option!
Cassava Flour Tortilla Chicken Tacos
Ingredients
- 4 cassava flour tortillas (I like Siete tortillas)
- 1 Tbsp coconut oil divided
- 1 cup mixed greens
- 1/4 apple julienned
- 1 avocado sliced
- 1-2 chicken breasts cooked and sliced
Instructions
- Lightly heat cassava flour tortillas with coconut oil over low heat.
- Top with greens, apple, avocado and chicken. Enjoy hot.
