Cassava Flour Tortilla Chicken Tacos

I get regular requests in The Myers Way® Community to post an AIP-friendly taco recipe. After all, tacos are one of the easiest recipes that you can make to please the whole family. These Cassava Flour Tortilla Chicken Tacos are the perfect meal to make on busy weeknights. They even make a great packed lunch!

Cassava Flour Tortillas

Most people think that because corn tortillas are gluten-free, they’re automatically the healthier option. However, corn tortillas can cause leaky gut the same way flour tortillas can. That’s because the protein in corn looks a lot like gluten. This particular protein triggers the release of zonulin, a chemical that tells your gut lining to “open.” When your gut lining is open, toxins, microbes, and undigested food particles can escape into your bloodstream, leading to inflammation and contributing to autoimmunity.

Cassava flour tortillas are an excellent swap for corn and flour varieties. Cassava is made from the root of the cassava plant, also known as yucca. It’s high in resistant starch, which has the same benefits as fiber to help keep you full and satisfied. Resistant starch also contains prebiotics, the food for good gut bacteria.

I personally love the cassava flour tortillas from Siete, which contain cassava and coconut flour, are vegan-friendly, and are perfect for soft tacos, quesadillas, wraps, rolls, and more! Lettuce or cabbage leaves are another gluten-free ‘tortilla’ option!

Chicken Taco Fillings 

Chicken breasts are a great protein to cook with because they’re flavorful and juicy. In addition to their great flavor, chicken breasts are a great source of many essential nutrients. They’re high in protein, which is important for building and repairing muscle. They also contain iron and zinc, which support the immune system, and high amounts of B vitamins, which are important for healthy blood cells, brain function, and energy levels.

The Tex-Mex inspired ingredients that give these chicken tacos so much flavor are mixed greens, avocado, and apple. 

Dark leafy greens such as spinach, kale, collard greens, or arugula are packed with vitamins, minerals, fiber, and even protein that supports optimal blood sugar levels, facilitates healthy brain function, and promotes bone and gut health. What’s more, leafy greens are packed with digestive enzymes that are critical for breaking down and absorbing the nutrients in your food.

In addition to containing optimal amounts of filling and satisfying dietary fiber, avocados are a great source of copper, pantothenic acid, folate, potassium, vitamin K, and monounsaturated fatty acids. These essential nutrients promote cardiovascular health by lowering your “bad” LDL cholesterol.

Apples are also loaded with fiber and have a lot of vitamin C to help keep the immune system healthy, which is especially important during back-to-school season.

Use two chicken breasts if you are making these Cassava Flour Tortilla Chicken Tacos for an entire meal, and add your favorite side dish (personally, I enjoy this with a side of roasted zucchini).

Ingredients

  • 4 cassava flour tortillas (I like Siete tortillas)
  • 1 Tbsp coconut oil divided
  • 1 cup mixed greens
  • 1/4 apple julienned
  • 1 avocado sliced
  • 2 chicken breast cooked and sliced

Instructions

  1. Lightly heat cassava flour tortillas with coconut oil over low heat.
  2. Top with greens, apple, avocado and chicken. Enjoy hot.
