Organic Roasted Pork Tenderloin with Pear Glaze and Pesto

Ingredients
Pork
- 1 lb 454.00 g pork tenderloin sliced into 1 inch rounds
- 2 pear cored and sliced
- 4 cups 960.00 ml shallots approximately 2 shallots, peeled and chopped
- 1 tbsp 14.79 ml Avocado oil
Pesto
- 2 cloves garlic
- 1 cup 240.00 ml fresh sage
- 1 cup 240.00 ml parsley
- 1/4 cup 60.00 ml extra virgin olive oil
- ground black pepper to taste
- sea salt to taste
Instructions
- Preheat oven to 400 degrees F. Heat avocado oil in skillet on stove at medium-high heat. Sear pork rounds for 4 minutes on each side or until browned.
- Place pork rounds at bottom of a glass baking dish. Top with sliced pear and shallots. Roast for 8-10 minutes or until cooked through (130 degrees F). Cooking time may vary based on ripeness of pears and thickness of pork.
- While pork cooks, put all pesto ingredients into a high speed blender or food processor and pulse to desired consistency.
- Remove pork from oven. Plate pork and top with pesto.
