To prepare this Detox Avocado Soup, place 2 cups diced cucumber, 3 ripe Hass avocados, 1 scoop of Collagen Protein, ½ cup diced celery, 2 tablespoons dill, 2 tablespoons parsley, 2 tablespoons cilantro, 1 optional clove garlic, 2 tablespoons apple cider vinegar, ¼ cup coconut milk, 1 teaspoon sea salt, and ½ teaspoon pepper in a high-speed blender or food processor.

Blend until the mixture is smooth and creamy. If the soup is too thick, add more coconut milk to reach your desired consistency. Taste the soup and adjust the seasoning with additional salt, herbs, or vinegar if needed. Transfer to a container and refrigerate for at least 1 hour to allow the flavors to develop and the soup to chill thoroughly.

Ingredients

  • 2 cups diced cucumber (peeled or unpeeled)
  • 3 Hass avocados
  • 1 scoop Collagen Protein
  • ½ cup celery, diced
  • 2 tbsp dill
  • 2 tbsp parsley
  • 2 tbsp cilantro 
  • 1 clove garlic (optional) 
  • 2 tbsp apple cider vinegar
  • ¼ cup coconut milk
  • 1 tsp sea salt
  • ½ tsp pepper

Directions

  1. Combine Ingredients: In a blender or food processor or high speed blender.
  2. Blend all the ingredients together until the mixture is smooth and creamy. If the soup is too thick, you can add more coconut milk to reach your desired consistency.
  3. Taste the soup and adjust the seasoning as needed. You can add more salt, herbs or vinegar to adjust the taste. 
  4. Transfer the soup to a bowl or container and refrigerate for at least 1 hour to allow the flavors to meld and the soup to chill thoroughly.
  5. Pour the cold soup into bowls and garnish with a drizzle of olive oil, a sprinkle of fresh herbs (like dill or parsley), or a few diced cucumbers for texture.
