After you’ve been fasting all night, you need a healthy dose of protein to start your morning. With this scramble, you can enjoy the comfort of sweet potatoes combined with nutrient-packed veggies and grass-fed beef. You can easily make this ahead and heat it up in the morning, or you can prep the ingredients the night before for quicker cooking in the morning. In a large skillet, brown beef over medium-low heat and season with sea salt. Set aside.
In another large skillet, heat coconut oil over medium heat. Add onions and cook for 3 minutes. Add sweet potatoes or squash and cook for 3 to 5 minutes. Add zucchini and asparagus and cook for another 5 minutes until veggies are soft. Season with cinnamon and nutmeg, and stir well.
Combine browned beef with veggies and serve topped with sliced avocado.
