After you’ve been fasting all night, you need a healthy dose of protein to start your morning. With this scramble, you can enjoy the comfort of sweet potatoes combined with nutrient-packed veggies and grass-fed beef. You can easily make this ahead and heat it up in the morning, or you can prep the ingredients the night before for quicker cooking in the morning. You can also substitute a different starchy veggie, such as cubed butternut squash, for the sweet potato if you wish. Find this recipe and more in my book The Thyroid Connection!
